These easy Italian soup recipes are the perfect way to warm up! And if you need some inspiration for dinner tonight, try this fantastic Italian Wedding Soup!

Ingredients

  • For the Meatballs
  • 1/2 pound ground beef

  • 1/2 pound ground pork

  • 1/3 cup breadcrumbs

  • 1/4 cup grated Parmesan cheese

  • 2 cloves garlic, minced

  • 1 egg

  • 1 tablespoon chopped parsley

  • Salt and pepper, to taste

  • 1 tablespoon olive oil

  • For the Soup
  • 2 tablespoons olive oil

  • 1 cup chopped onion

  • 1 cup diced carrots

  • 2 diced celery ribs

  • 8 cups chicken broth

  • 1/2 cup dry white wine (optional)

  • 1 cup acini de pepe pasta, uncooked

  • 1 large bunch of fresh spinach, trimmed and cleaned

  • Salt and pepper, to taste

  • Grated Parmesan cheese, for serving

Instructions

  • In a large bowl, mix the ground beef, ground pork, breadcrumbs, Parmesan, garlic, egg, parsley, salt, and pepper.
  • Gently mix until well combined. Then, portion into 3/4 inch balls.
  • Warm the oil in a large skillet over medium heat, add the meatballs, and cook until brown on all sides.
  • Remove the skillet from the heat and set aside.
  • Add the remaining oil to a large pot or Dutch oven. Warm over medium heat, then add the onion, carrots, and celery, and cook until soft.
  • Pour the chicken broth and wine into the pot and turn up the heat to medium-high.
  • Bring the liquid to a boil, then reduce the heat to medium-low.
  • Add the pasta, stir well, and cook until tender.
  • Add the meatballs and spinach and cook until wilted.
  • Adjust the salt and pepper, as needed.
